完全西餐礼仪
开始点菜吧
●从前菜到咖啡，这是最传统的套餐形式：前菜→汤→鱼类料理→肉类料理1(主菜)→ 水果冰点→肉类料理2→沙拉→甜点→水果 咖啡。在前菜之前可饮用少许开胃酒，也可以 选用很少量的小点心。

如何摆置刀与叉
用餐中为八字形，如果在用餐中途暂时休息片刻，可将刀叉分话盘中，刀头与叉尖相对 成”一”字形或”八”字形，刀叉朝向自己，表示还是继续吃。如是是谈话，可以拿着刀叉 ，无须放下，但若需是作手势时，就应放下刀叉，千万不可手执刀叉在空中挥舞摇晃。应当 注意，不管任何时候，都不可将刀叉的一端放在盘上，另一端放在桌上。 刀与叉除了将料 理切开送入口中之外，还有另一项非常重要的功用。刀叉的摆置方式传达出“用餐中”或是 “结束用餐”之讯息。 而服务生是利用这种方式，判断客人的用餐情形，以及是否收拾餐 具准备接下来的服务等等，所以希望积闰能够记住正的的餐具摆置方式。特别要注意的是刀 刃侧必须面向自己。用餐结束的摆置方式有两种：用餐结束后中，可将叉子的下面向上，刀 子的 度胁?向内与叉子并拢，平行放置于餐盘上。接下来的摆置方式又分为英国式与法国 式，不论哪种方式都可以，但最常用的是法国式。尽量将柄放入餐盘内，这样可以避免因碰 触而掉落，服务生也较容易收拾。 出席结婚餐宴时，不论怎么将餐具摆成“用餐中”的位 置，只要主要宾客用餐结束，就应立即把所有的料理收起。所以宴会时，切记皆以主要宾客 为中心进行。在宴会中，每吃一道菜用一副刀叉，对摆在面前的刀叉，是从外侧依次向内取 用，因为刀叉摆放的顺序正是每道菜上桌的顺序。刀叉用完了，上菜也结束了。中途需是谈 话或休息时，应该将刀叉呈八字形平架在盘子两边。反之，刀叉柄朝向自己并列放在盘子里 ，则表示这一道菜已经用好了，服务员就会把盘子撤去。前菜或是甜点等，如果是可以直接 用叉子叉起食用的料理，没有必要刻意地一定使用刀子。在家庭内的餐会或是与朋友之间的 轻松聚餐，像沙拉或是蛋包饭之类较软的料理也可以只使用叉子的进餐。但是在正式的宴席 上使用刀叉，能给人较为优雅利落的感觉。另外，在欧洲等地，常可看见有人右手拿叉子， 左手则拿着面包用餐。不管吃得怎么利落优雅，这样用餐也只能在家庭或大众化的店中，在 高级餐厅内是绝对行不通的。 没用过的刀子，就这样放在桌上即可，服务生会自动将它收 走。 虽说将刀与叉放在餐盘上并拢是代表结束用餐的讯息，但是没有必要把干净刀子特地 放入弄脏的餐盘内。 没有用过的餐具保持原状放在原处即可，硬要追求形式的规则反而显 得奇怪。随机应变，依当时的状况处理事物才是最正确的。 即使掉了也不算出丑，但是自 己弯下腰去捡就满丢脸的。所以东西掉了的时候最好请服务生过来替你捡起。服务生随时都 在注意客人的情况，所以会很快地再拿新的餐具过来，万一服务生没有注意到，可以面向服 务生稍微地将手抬高一下，尽量不要引起其他人侧目注视。 服务生的工作是为了使客人能 更愉快地用餐，所以尽可向他们提出要求。
刀与叉的基本使用方式

大话西餐礼仪
说个实话，西餐这个东西未必合我们每个人的口味。我老婆有一次私下就跟我发表过感慨，说吃西餐啊，吃的是形式，内容上不足挂齿。她跟我她说我跟你吃西餐，我从来没吃饱过。点着红红的蜡烛，铺着白白的餐巾，拿着银质的刀叉，吃的东西半生不熟，没吃饱过。即便这样，她发表一个诚实的感受，可是有的时候你到人家那儿吃饭，比如你跟外商在一块儿谈事，他请你吃西餐，你是没有办法回避。你到国外去有些地方你找中餐，他做得也不地道，往往还很贵，这样的话就有西餐礼仪问题了。
首先我要来简单说说什么是西餐。严格地讲，西餐这个提法是不太严谨的，你很难把西餐是什么说清楚。我们只能这样讲，所谓西餐是指的对西方国家餐饮的一种统称，其基本特点是要用刀叉进食。用餐方式实际上是有三大类别，第一大类别我们称为东方型，就是拿筷子。中国人，日本人，韩国人，老挝人他用筷子吃东西，当然有的筷子和筷子还有不同。比如你要去过韩国你会发现，韩国的筷子一般是金属的，而且比较扁，带尖，因为他吃烧烤，那个东西可以叉食，半个叉子。我们这儿是方方的圆圆的，我是讲十里不同风，百里不同俗，我们东方形态一般就是用筷子吃东西。另外一个类型，我们可以称为印度、阿拉伯人的类型。他们那个特点是什么呢？是不用餐具，用手直接取食，一般的特点就是用右手把要进嘴的东西把它撮放到一块儿，然后放到嘴里去，必要的话有洗手钵，把手指头在里面涮洗。像这种情况我们也见得多了，也不会少见多怪，看不惯了，但是若干年以前不行。我记得若干若干年之前刚改革开放，那时候少见它就多怪，我跟几个同事吃印度菜去了，好嘛，一上桌，人家就把洗手钵，每个人前面一小碟子，浅浅的，银质的那个盘子，有一半是水，很清澈的，上面放着柠檬的切片和玫瑰的花瓣，很好看，高档菜馆。我们一个老兄就发言了，老外还是比较会吃，没吃就给喝高汤，咋整，没办法，我们只能陪着他整，一人喝了一碗洗手水。因为他是主宾，你还不能让主宾丢人你能说他吗，你说你傻冒，你不能说，你只能陪着他，舍命陪君子，我记忆犹新，这20多年过去了，我还忘不了这事，跟人家喝了一碗洗手水，好在还没洗，它是这样的特点。另外就是西方国家的，它的特点运用刀叉去取食。但是严格地讲，英国菜、俄罗斯菜、法国菜，意大利菜，西班牙菜它还是有很大区别的，不过在中国人的眼里差不多，所以我们称为西餐。
西餐礼仪它涉及的面非常多，比如进餐的顺序有讲究。西餐跟中餐有一条很大的不同，中餐往往是一桌，给你上满了，西餐是吃一道上一道，吃一道上一道，吃一道上一道的，所以点菜的顺序有讲究。再者餐具的摆放和使用有讲究，你不能乱来，当然我有一个朋友也跟我说，说吃西餐最爽的做法用筷子，这实际上不可能。再者餐桌上举止有讲究，譬如，吃西餐一般那个手，我上次讲了手是不能放在桌下去的，它男女交叉排列。比如西餐一般是长桌，我是位先生，我的对面和两侧肯定都是美女，而且外国人的习惯，他为了多交朋友，广结善缘，他习惯把不认识的人排在一块儿，让大家交流去认识，老把熟人放一块儿这也麻烦了。明白手不能放到下面的原因了吧？那你手放在下面就麻烦了，你说你抓痒痒去了，万一抓错了地方呢？你的手。吃西餐的话两个手要像我现在这样的，要放在台子上面，不能放下面，你放下面有时候也不好看。它有非常认真的讲究。
那么在西餐的餐桌礼仪中还有一点是比较重要的，就是餐桌上的交际是有讲究的。比如你跟谁说话，你说什么话，你先跟谁说话，后跟谁说话都有讲究。比如你要去过正规的西餐厅你会发现正规的西餐厅跟中餐厅有一点截然的不同，什么地方不同呢？你见不到现场服务的女服务生，女服务生顶多是在那买单的，结帐的，领位的，但是端盘子端菜的他都是男人。因为西餐是讲女士优先，男人干活，女人管吃，所以你要去参加一个家宴的西餐宴会的话，你要是一个有良好教养的男士，你首先应该致意的就是女主人，夫人好。如果这个女主人亲自下手做羹汤，为你做饭的话，你还得赞美一下这个菜烧得很好吃。不管真好吃，假好吃，都得说好吃，这是对女主人的尊重也是对她全家的尊重，我刚才讲这些问题你要不注意它就出麻烦了，我给你讲两个笑话。
大概是十几年以前，有一次跟一个女孩子去吃西餐去了，当时是个公务活动，这个公务活动轮到我做东就请她，我说你吃中餐还是西餐，她告诉我吃西餐，行。到了一个位置上面，一个雅座，很幽静的一个地方，女士优先一般要请女士点菜，菜单给她了，我当时还跟她说，我说你随意，别客气，你就点吧。当然我跟她是工作关系，不是情侣关系，所以人家点菜的话我不可能坐边上的，更不能去看，否则人家该说我花钱舍不得了。她在那儿点菜，我在边上就看看街景，因为临窗，就看那个女孩倒挺熟练，点菜单挺快，就点了那么几个。当时服务生说了句话我没太在意，服务生问，还要别的吗？我误会是认为她点的菜太便宜了，我说你就听小姐的吧，她点什么菜你就上什么。按照一般西餐的规定，头盘第一道菜十分钟点菜以后就要上，然后吃完一道上一道，吃完一道上一道，好嘛，过了15分钟都不见人影。我就出了门了，我们是个雅座，我问门口那个服务生，我说你给我找找人去，看菜为什么没来，好，跑去给我找了，一扭头，他也没了。我又走出去我把领班给找来，我说我的菜呢？他说我马上给你找，一会儿他也没了，最后我急了，我跑去找总经理去了，总经理不在，总经理秘书在，跟秘书把这事一说秘书也挺重视，说不可能啊，我说什么不可能，我这一个大活人我骗你，我可是懂西餐的规矩的，你这个头盘十分钟上，你看现在快半个小时了。说那我给你找去吧，当时那个女孩子也很认真，穿着一个筒裙做奔跑状，搞得我也不好意思再说什么。她跑到操作间去了，不出来了，我这人脾气不太好，我就拱进去了，一拱进去发现他们几个人正在那儿扎堆聊着呢，一看见我进来那个小姐就问，说您真要吗？态度不一样了，好像比较自信了，不像对不起我的样子了。我说当然要，我点的菜不要谁要？她说那就上。好家伙，七个服务生排成一行给我上菜，而且那个高档菜馆每个菜都盖着盖，先放到我们面前把这个盖同时揭开，我傻了，你知道那小姐点的什么吗？点了七份汤，她点了七份汤。因为当时我们吃的是个高档的法国菜馆，菜单全是法文，明白吗？我们那个菜单上面，那个小姐点菜时她倒是好心，她帮我省钱来着，菜单我们讲西餐是汤在前面，价钱相对便宜一点，据后来她告诉我她怎么一个点法，她反正就是认识阿拉伯数字，捡便宜点，13579点单数，给我整了七份汤，你说七份汤我怎么喝，咱渴了一人喝俩，总不能喝3.5。
当然我还见过更狠的。我有一个学生，男孩谈女朋友，女朋友他们宿舍的女生打牙祭，起哄，那个男孩是刚工作，记者，报社里当记者，说你请我们吃饭吧，那个男孩说请，行啊，请到一个涉外酒店去了。先打了打保龄球，然后吃饭，女孩子就在那儿点，点了半天菜不上来，这个记者嘛，有时候就有点那个，耐不住气，找人家总经理去了，我要的菜为什么没上？总经理找人一查已经上过了，他说活见了鬼了，我们三四个人在那儿坐着，难道我们骗吃吗？没上，盘儿都没有，后来一问，还真上了。你知道点的什么吗？点了四首乐曲。它现场有演奏的，他们这儿他不懂外文，你不点他也演奏，你要点，你点什么给你演奏什么，它就出现点菜的问题了。
所以我跟别人开玩笑，我说你吃西餐也好，吃中餐也好，不认识的菜名没听说的事太多了。金教授我还别说吃西餐，吃中餐有时候你碰到的事，你都干不住。比如我有一次吃到一道菜叫做青龙过江，我觉得这菜挺雅致，那年正好龙年，我说弄一个青龙过江，一上来一根大葱在一个长条碗里，从这头趴那头，然后一盆汤，青龙过江。我还吃过一道菜叫母子重逢，什么呢？一母鸡肚子里一小鸡，母子重逢。还有更狠的，手足情，一个鸡腿、一个猪腿，手足情。俩腿，所以这个玩意你看你都看不出来，所以点菜它有时候有讲究，中餐也好，西餐也好你要省事的话有三招教给你，第一招是什么呢？第一招就是最省事的，你要不懂你紧跟。比如你身边有一个人，比如你觉得金教授挺在行，金教授在边上，金教授点了一个罗宋汤，点了一个里脊，比如烤鱼或者是牛排，然后再点了一个蔬菜色拉，那你最省事，跟他一样，不会出错，你不会出错的，打群架要错咱们一起错，要错大家全都错那就不算错，你要一错你就糊涂了。第二个办法是什么？点套餐。经营型的菜馆里面它都有套餐，套餐不仅搭配合理，而且费用上比较省，对你不了解西餐的特点的人，这个是最省事的，你绝对不出错。还有一个办法就是你请人帮助了，你就别客气了，请你周围熟悉的人，长辈、专业人士来帮个忙，你别乱来，否则你弄巧成拙，它点菜有讲究。
另外餐具的使用有讲究，我再讲一个我道听途说的例子，据说是确有其事的。甲午海战之后，当时中国是蒙受屈辱了，兵临城下，满清政府慈禧就派某一个高官到日本去谈事去了，这某高官地位倒挺高，但是大概西餐这个东西很少碰到，不懂餐桌礼仪，他就犯一个错误。西餐的餐具是不能擦的，你别看餐具放在桌子上，放在餐巾边上，它实际上是经过蒸的，蒸煮消毒的，它一般都是你看外国人用的洗碗柜洗碗炉，它是蒸煮的，所以它一般而论，它这个餐具都是很干净的，所以你不能擦，如果你要在主人面前拿餐巾把这餐具擦一下，等于骂他，老子认为这玩意不干净你给我换，你有挑衅之嫌。这往往是两家谈生意，两国关系不好，找事，借题发挥。当时我们派到日本谈事这某高官，吃日本一个高官的请，这俩人是私交，但是两国交兵各为其主，所以在谈判桌上都是据理力争的。中国当时国力不强，吃了败仗，肯定是吃亏了，甲午海战之后谈这个事，我们是有损失的，这个高官他有气，其实他当时不是生气，他习惯动作，往那儿一坐，吃西餐把那刀叉拿过来就擦。对面那日本人就误会了，认为他觉得自己不够朋友，因为两个人是朋友，他就告诉服务生，换。换了一副刀叉我们接着擦，然后换，接着擦，历史记载，如是者七，就是连换七拨。这也是挺出洋相的事。所以有鉴于此，我下面要比较详尽地跟各位来介绍一下相关的西餐礼仪。
首先我来讲一讲西餐的餐序，就是你点菜吃菜的顺序。说实话没有人在场的话你愿意吃什么吃什么，但是比较正规的宴请这个西餐是有餐序的讲究的。大体上分为正餐和便餐两种类别，那么我首先来跟各位说说正餐的讲究。正餐一般来讲，有这么几道菜，第一道菜我们一般把它叫做头盘或者叫头盆，严格讲这是开胃菜，比如以色拉类为主，有的时候还有什么鹅肝酱，冻子，泥子这样一些东西，但是我们中国人熟悉的头盘主要是色拉，这个色拉有很多种，比如有蔬菜色拉，这比较清口的，有海鲜色拉，是比较名贵的，还有什锦色拉，混拌在一起的。除此之外这个头盘还有泥子、冻子之类的东西。所谓泥子我打个比方，很多同志吃肯德基吃过那土豆泥吧，还有一些同志到西餐馆吃过水果泥，把菠萝、苹果、梨给它磨成粘稠状的东西，这个其实在西餐中它也是开胃菜，一般选一种就行了，还有就是冻子，打个比方皮冻以前吃过吧，孩子的果冻你见过吧，西餐有的时候它也把菜给它熬熟了之后做成凝固状，冻子，它也是开胃菜，这是头盆。头盆一大特点比较清淡，比较爽口，帮助你打开胃口做好正餐的准备，所以严格讲它不是菜，就是开始曲，前奏。
