完全西餐禮儀
開始點菜吧
●從前菜到咖啡，這是最傳統的套餐形式：前菜→湯→魚類料理→肉類料理1(主菜)→ 水果冰點→肉類料理2→沙拉→甜點→水果 咖啡。在前菜之前可飲用少許開胃酒，也可以 選用很少量的小點心。
鳥類：先把翅膀和腿切下，然後藉助刀和叉來吃身體部分。你可以把翅膀和腿用手拿著吃， 但不能拿身體部分。 雞肉：先吃雞的一半。把雞腿和雞翅用刀叉從連結處分開。然後用叉穩住雞腿（雞脯或雞翅 ），用刀把肉切成適當大小的片。每次只切兩三片。如果場合很正式，不能適合刀叉取用的 ，乾脆別動。如果是在非正式場合，你可以用手拿取小塊骨頭，但中能使用一隻手。
肉排：用叉子或尖刀插入牛肉，豬肉或羊肉排的中心。如果排骨上有紙袖，你可用手抓住， 來切骨頭上的肉，而這樣就不會使手油膩。在正式場合或者在飯店就餐時即使包有紙袖也不 能用手拿著骨頭啃著吃。這些多餘的東西基本上是用來作裝飾的，而沒有讓你暴吃一頓的意 思。另外，在非正式場合，只有骨頭上沒有湯時才可以拿起來啃著吃。
魚 先用刀叉把魚頭和魚尾割下，放在盤邊。然後用刀尖順著魚骨把魚從頭到尾劈開。這時 你有三種選擇： 1 、將魚骨滑出 2、將魚平著分開，取出魚骨 3、揭去上面一片，吃完後再去骨 如果嘴裡吃進了小骨頭，用姆指和食指捏出，愛吃魚的人會連小魚頭吃掉，而吃到魚的臉頰 是很幸運的事。
如何擺置刀與叉
用餐中為八字形，如果在用餐中途暫時休息片刻，可將刀叉分話盤中，刀頭與叉尖相對 成」一」字形或」八」字形，刀叉朝向自己，表示還是繼續吃。如是是談話，可以拿著刀叉 ，無須放下，但若需是作手勢時，就應放下刀叉，千萬不可手執刀叉在空中揮舞搖晃。應當 注意，不管任何時候，都不可將刀叉的一端放在盤上，另一端放在桌上。 刀與叉除了將料 理切開送入口中之外，還有另一項非常重要的功用。刀叉的擺置方式傳達出「用餐中」或是 「結束用餐」之訊息。 而服務生是利用這種方式，判斷客人的用餐情形，以及是否收拾餐 具准備接下來的服務等等，所以希望積閏能夠記住正的的餐具擺置方式。特別要注意的是刀 刃側必須面向自己。用餐結束的擺置方式有兩種：用餐結束後中，可將叉子的下面向上，刀 子的 度脅?向內與叉子並攏，平行放置於餐盤上。接下來的擺置方式又分為英國式與法國 式，不論哪種方式都可以，但最常用的是法國式。盡量將柄放入餐盤內，這樣可以避免因碰 觸而掉落，服務生也較容易收拾。 出席結婚餐宴時，不論怎麼將餐具擺成「用餐中」的位 置，只要主要賓客用餐結束，就應立即把所有的料理收起。所以宴會時，切記皆以主要賓客 為中心進行。在宴會中，每吃一道菜用一副刀叉，對擺在面前的刀叉，是從外側依次向內取 用，因為刀叉擺放的順序正是每道菜上桌的順序。刀叉用完了，上菜也結束了。中途需是談 話或休息時，應該將刀叉呈八字形平架在盤子兩邊。反之，刀叉柄朝向自己並列放在盤子里 ，則表示這一道菜已經用好了，服務員就會把盤子撤去。前菜或是甜點等，如果是可以直接 用叉子叉起食用的料理，沒有必要刻意地一定使用刀子。在家庭內的餐會或是與朋友之間的 輕松聚餐，像沙拉或是蛋包飯之類較軟的料理也可以只使用叉子的進餐。但是在正式的宴席 上使用刀叉，能給人較為優雅利落的感覺。另外，在歐洲等地，常可看見有人右手拿叉子， 左手則拿著麵包用餐。不管吃得怎麼利落優雅，這樣用餐也只能在家庭或大眾化的店中，在 高級餐廳內是絕對行不通的。 沒用過的刀子，就這樣放在桌上即可，服務生會自動將它收 走。 雖說將刀與叉放在餐盤上並攏是代表結束用餐的訊息，但是沒有必要把干凈刀子特地 放入弄臟的餐盤內。 沒有用過的餐具保持原狀放在原處即可，硬要追求形式的規則反而顯 得奇怪。隨機應變，依當時的狀況處理事物才是最正確的。 即使掉了也不算出醜，但是自 己彎下腰去撿就滿丟臉的。所以東西掉了的時候最好請服務生過來替你撿起。服務生隨時都 在注意客人的情況，所以會很快地再拿新的餐具過來，萬一服務生沒有注意到，可以面向服 務生稍微地將手抬高一下，盡量不要引起其他人側目注視。 服務生的工作是為了使客人能 更愉快地用餐，所以盡可向他們提出要求。
刀與叉的基本使用方式
料理上桌後的基本動作，即是「右手拿刀切開，然後左手拿叉將料理叉起」。以叉子壓 住料理的左端，固定，順著叉子的側邊以刀切下約一口大小的料理後，叉子即可直接駐起料 理送入口中，簡單說即是「以叉子壓住後再以刀切開」。如果想順利地將食物切開，首先就 從姿勢開始吧！正確的姿勢與適當的角度非常重要。兩側手肘過高會使刀叉角度過大，而呈 直立狀態；相反地，如果手肘過低將使刀叉呈倒下狀態，所以沒有辦法好好地將料理切開。 將肩膀與手腕放鬆，兩臂不要張開，刀與餐盤的角度保持在15度左右。這里歸納成七個要點 ：面向料理端正坐好；肩膀與手腕放鬆；兩臂貼著身體；手肘不要過高或低；刀叉與餐盤呈 傾斜角；以叉將料理緊緊按住；輕輕地移動刀子，壓住時可用力。這樣一來，不但能輕易地 將食物切開，而且姿勢看起來也相當地優雅。刀的移動方式也有要領。首先用力於左手的叉
大話西餐禮儀
說個實話，西餐這個東西未必合我們每個人的口味。我老婆有一次私下就跟我發表過感慨，說吃西餐啊，吃的是形式，內容上不足掛齒。她跟我她說我跟你吃西餐，我從來沒吃飽過。點著紅紅的蠟燭，鋪著白白的餐巾，拿著銀質的刀叉，吃的東西半生不熟，沒吃飽過。即便這樣，她發表一個誠實的感受，可是有的時候你到人家那兒吃飯，比如你跟外商在一塊兒談事，他請你吃西餐，你是沒有辦法迴避。你到國外去有些地方你找中餐，他做得也不地道，往往還很貴，這樣的話就有西餐禮儀問題了。
首先我要來簡單說說什麼是西餐。嚴格地講，西餐這個提法是不太嚴謹的，你很難把西餐是什麼說清楚。我們只能這樣講，所謂西餐是指的對西方國家餐飲的一種統稱，其基本特點是要用刀叉進食。用餐方式實際上是有三大類別，第一大類別我們稱為東方型，就是拿筷子。中國人，日本人，韓國人，寮國人他用筷子吃東西，當然有的筷子和筷子還有不同。比如你要去過韓國你會發現，韓國的筷子一般是金屬的，而且比較扁，帶尖，因為他吃燒烤，那個東西可以叉食，半個叉子。我們這兒是方方的圓圓的，我是講十里不同風，百里不同俗，我們東方形態一般就是用筷子吃東西。另外一個類型，我們可以稱為印度、阿拉伯人的類型。他們那個特點是什麼呢？是不用餐具，用手直接取食，一般的特點就是用右手把要進嘴的東西把它撮放到一塊兒，然後放到嘴裡去，必要的話有洗手缽，把手指頭在裡面涮洗。像這種情況我們也見得多了，也不會少見多怪，看不慣了，但是若干年以前不行。我記得若干若干年之前剛改革開放，那時候少見它就多怪，我跟幾個同事吃印度菜去了，好嘛，一上桌，人家就把洗手缽，每個人前面一小碟子，淺淺的，銀質的那個盤子，有一半是水，很清澈的，上面放著檸檬的切片和玫瑰的花瓣，很好看，高檔菜館。我們一個老兄就發言了，老外還是比較會吃，沒吃就給喝高湯，咋整，沒辦法，我們只能陪著他整，一人喝了一碗洗手水。因為他是主賓，你還不能讓主賓丟人你能說他嗎，你說你傻冒，你不能說，你只能陪著他，捨命陪君子，我記憶猶新，這20多年過去了，我還忘不了這事，跟人家喝了一碗洗手水，好在還沒洗，它是這樣的特點。另外就是西方國家的，它的特點運用刀叉去取食。但是嚴格地講，英國菜、俄羅斯菜、法國菜，義大利菜，西班牙菜它還是有很大區別的，不過在中國人的眼裡差不多，所以我們稱為西餐。
西餐禮儀它涉及的面非常多，比如進餐的順序有講究。西餐跟中餐有一條很大的不同，中餐往往是一桌，給你上滿了，西餐是吃一道上一道，吃一道上一道，吃一道上一道的，所以點菜的順序有講究。再者餐具的擺放和使用有講究，你不能亂來，當然我有一個朋友也跟我說，說吃西餐最爽的做法用筷子，這實際上不可能。再者餐桌上舉止有講究，譬如，吃西餐一般那個手，我上次講了手是不能放在桌下去的，它男女交叉排列。比如西餐一般是長桌，我是位先生，我的對面和兩側肯定都是美女，而且外國人的習慣，他為了多交朋友，廣結善緣，他習慣把不認識的人排在一塊兒，讓大家交流去認識，老把熟人放一塊兒這也麻煩了。明白手不能放到下面的原因了吧？那你手放在下面就麻煩了，你說你抓癢癢去了，萬一抓錯了地方呢？你的手。吃西餐的話兩個手要像我現在這樣的，要放在檯子上面，不能放下面，你放下面有時候也不好看。它有非常認真的講究。
那麼在西餐的餐桌禮儀中還有一點是比較重要的，就是餐桌上的交際是有講究的。比如你跟誰說話，你說什麼話，你先跟誰說話，後跟誰說話都有講究。比如你要去過正規的西餐廳你會發現正規的西餐廳跟中餐廳有一點截然的不同，什麼地方不同呢？你見不到現場服務的女服務生，女服務生頂多是在那買單的，結帳的，領位的，但是端盤子端菜的他都是男人。因為西餐是講女士優先，男人幹活，女人管吃，所以你要去參加一個家宴的西餐宴會的話，你要是一個有良好教養的男士，你首先應該致意的就是女主人，夫人好。如果這個女主人親自下手做羹湯，為你做飯的話，你還得贊美一下這個菜燒得很好吃。不管真好吃，假好吃，都得說好吃，這是對女主人的尊重也是對她全家的尊重，我剛才講這些問題你要不注意它就出麻煩了，我給你講兩個笑話。
大概是十幾年以前，有一次跟一個女孩子去吃西餐去了，當時是個公務活動，這個公務活動輪到我做東就請她，我說你吃中餐還是西餐，她告訴我吃西餐，行。到了一個位置上面，一個雅座，很幽靜的一個地方，女士優先一般要請女士點菜，菜單給她了，我當時還跟她說，我說你隨意，別客氣，你就點吧。當然我跟她是工作關系，不是情侶關系，所以人家點菜的話我不可能坐邊上的，更不能去看，否則人家該說我花錢捨不得了。她在那兒點菜，我在邊上就看看街景，因為臨窗，就看那個女孩倒挺熟練，點菜單挺快，就點了那麼幾個。當時服務生說了句話我沒太在意，服務生問，還要別的嗎？我誤會是認為她點的菜太便宜了，我說你就聽小姐的吧，她點什麼菜你就上什麼。按照一般西餐的規定，頭盤第一道菜十分鍾點菜以後就要上，然後吃完一道上一道，吃完一道上一道，好嘛，過了15分鍾都不見人影。我就出了門了，我們是個雅座，我問門口那個服務生，我說你給我找找人去，看菜為什麼沒來，好，跑去給我找了，一扭頭，他也沒了。我又走出去我把領班給找來，我說我的菜呢？他說我馬上給你找，一會兒他也沒了，最後我急了，我跑去找總經理去了，總經理不在，總經理秘書在，跟秘書把這事一說秘書也挺重視，說不可能啊，我說什麼不可能，我這一個大活人我騙你，我可是懂西餐的規矩的，你這個頭盤十分鍾上，你看現在快半個小時了。說那我給你找去吧，當時那個女孩子也很認真，穿著一個筒裙做奔跑狀，搞得我也不好意思再說什麼。她跑到操作間去了，不出來了，我這人脾氣不太好，我就拱進去了，一拱進去發現他們幾個人正在那兒扎堆聊著呢，一看見我進來那個小姐就問，說您真要嗎？態度不一樣了，好像比較自信了，不像對不起我的樣子了。我說當然要，我點的菜不要誰要？她說那就上。好傢伙，七個服務生排成一行給我上菜，而且那個高檔菜館每個菜都蓋著蓋，先放到我們面前把這個蓋同時揭開，我傻了，你知道那小姐點的什麼嗎？點了七份湯，她點了七份湯。因為當時我們吃的是個高檔的法國菜館，菜單全是法文，明白嗎？我們那個菜單上面，那個小姐點菜時她倒是好心，她幫我省錢來著，菜單我們講西餐是湯在前面，價錢相對便宜一點，據後來她告訴我她怎麼一個點法，她反正就是認識阿拉伯數字，撿便宜點，13579點單數，給我整了七份湯，你說七份湯我怎麼喝，咱渴了一人喝倆，總不能喝3.5。
當然我還見過更狠的。我有一個學生，男孩談女朋友，女朋友他們宿舍的女生打牙祭，起鬨，那個男孩是剛工作，記者，報社裡當記者，說你請我們吃飯吧，那個男孩說請，行啊，請到一個涉外酒店去了。先打了打保齡球，然後吃飯，女孩子就在那兒點，點了半天菜不上來，這個記者嘛，有時候就有點那個，耐不住氣，找人家總經理去了，我要的菜為什麼沒上？總經理找人一查已經上過了，他說活見了鬼了，我們三四個人在那兒坐著，難道我們騙吃嗎？沒上，盤兒都沒有，後來一問，還真上了。你知道點的什麼嗎？點了四首樂曲。它現場有演奏的，他們這兒他不懂外文，你不點他也演奏，你要點，你點什麼給你演奏什麼，它就出現點菜的問題了。
所以我跟別人開玩笑，我說你吃西餐也好，吃中餐也好，不認識的菜名沒聽說的事太多了。金教授我還別說吃西餐，吃中餐有時候你碰到的事，你都干不住。比如我有一次吃到一道菜叫做青龍過江，我覺得這菜挺雅緻，那年正好龍年，我說弄一個青龍過江，一上來一根大蔥在一個長條碗里，從這頭趴那頭，然後一盆湯，青龍過江。我還吃過一道菜叫母子重逢，什麼呢？一母雞肚子里一小雞，母子重逢。還有更狠的，手足情，一個雞腿、一個豬腿，手足情。倆腿，所以這個玩意你看你都看不出來，所以點菜它有時候有講究，中餐也好，西餐也好你要省事的話有三招教給你，第一招是什麼呢？第一招就是最省事的，你要不懂你緊跟。比如你身邊有一個人，比如你覺得金教授挺在行，金教授在邊上，金教授點了一個羅宋湯，點了一個裡脊，比如烤魚或者是牛排，然後再點了一個蔬菜色拉，那你最省事，跟他一樣，不會出錯，你不會出錯的，打群架要錯咱們一起錯，要錯大家全都錯那就不算錯，你要一錯你就糊塗了。第二個辦法是什麼？點套餐。經營型的菜館裡面它都有套餐，套餐不僅搭配合理，而且費用上比較省，對你不了解西餐的特點的人，這個是最省事的，你絕對不出錯。還有一個辦法就是你請人幫助了，你就別客氣了，請你周圍熟悉的人，長輩、專業人士來幫個忙，你別亂來，否則你弄巧成拙，它點菜有講究。
另外餐具的使用有講究，我再講一個我道聽途說的例子，據說是確有其事的。甲午海戰之後，當時中國是蒙受屈辱了，兵臨城下，滿清政府慈禧就派某一個高官到日本去談事去了，這某高官地位倒挺高，但是大概西餐這個東西很少碰到，不懂餐桌禮儀，他就犯一個錯誤。西餐的餐具是不能擦的，你別看餐具放在桌子上，放在餐巾邊上，它實際上是經過蒸的，蒸煮消毒的，它一般都是你看外國人用的洗碗櫃洗碗爐，它是蒸煮的，所以它一般而論，它這個餐具都是很乾凈的，所以你不能擦，如果你要在主人面前拿餐巾把這餐具擦一下，等於罵他，老子認為這玩意不幹凈你給我換，你有挑釁之嫌。這往往是兩家談生意，兩國關系不好，找事，借題發揮。當時我們派到日本談事這某高官，吃日本一個高官的請，這倆人是私交，但是兩國交兵各為其主，所以在談判桌上都是據理力爭的。中國當時國力不強，吃了敗仗，肯定是吃虧了，甲午海戰之後談這個事，我們是有損失的，這個高官他有氣，其實他當時不是生氣，他習慣動作，往那兒一坐，吃西餐把那刀叉拿過來就擦。對面那日本人就誤會了，認為他覺得自己不夠朋友，因為兩個人是朋友，他就告訴服務生，換。換了一副刀叉我們接著擦，然後換，接著擦，歷史記載，如是者七，就是連換七撥。這也是挺出洋相的事。所以有鑒於此，我下面要比較詳盡地跟各位來介紹一下相關的西餐禮儀。
首先我來講一講西餐的餐序，就是你點菜吃菜的順序。說實話沒有人在場的話你願意吃什麼吃什麼，但是比較正規的宴請這個西餐是有餐序的講究的。大體上分為正餐和便餐兩種類別，那麼我首先來跟各位說說正餐的講究。正餐一般來講，有這么幾道菜，第一道菜我們一般把它叫做頭盤或者叫頭盆，嚴格講這是開胃菜，比如以色拉類為主，有的時候還有什麼鵝肝醬，凍子，泥子這樣一些東西，但是我們中國人熟悉的頭盤主要是色拉，這個色拉有很多種，比如有蔬菜色拉，這比較清口的，有海鮮色拉，是比較名貴的，還有什錦色拉，混拌在一起的。除此之外這個頭盤還有泥子、凍子之類的東西。所謂泥子我打個比方，很多同志吃肯德基吃過那土豆泥吧，還有一些同志到西餐館吃過水果泥，把菠蘿、蘋果、梨給它磨成粘稠狀的東西，這個其實在西餐中它也是開胃菜，一般選一種就行了，還有就是凍子，打個比方皮凍以前吃過吧，孩子的果凍你見過吧，西餐有的時候它也把菜給它熬熟了之後做成凝固狀，凍子，它也是開胃菜，這是頭盆。頭盆一大特點比較清淡，比較爽口，幫助你打開胃口做好正餐的准備，所以嚴格講它不是菜，就是開始曲，前奏。
正餐西餐第二道，主角就要開始了，如果我們說前面是前奏的話，那下面就是序幕就開始了就是湯。西餐跟廣東菜有點相似，是先喝湯的，西餐這個湯也叫做開胃湯，不過這兒說個實話，我個人不明白西餐那湯為什麼叫開胃湯，我往往一喝就飽了，可是他們把它叫做開胃湯的。比如有三種類型，紅湯、清湯，白湯，紅湯我們北京人比較熟了，因為北京人過去比較喜歡吃老莫，莫斯科餐廳吃俄羅斯菜，俄羅斯菜裡面那個羅宋湯，就是俄羅斯紅菜湯。這是紅湯，瓊汁，圓白菜，紅蘿卜，西紅柿它在一塊兒做的，那種湯它比較酸甜，很多人喜歡喝。還有就是白湯，蘑菇湯，奶油湯，這在法國菜里比較常見的，還有就是清湯，它比較清淡的，湯。
