喝油茶必須配以各種佐食的小吃,都是各種油炸和炒香的食品。苗、瑤、侗等少數民族地區佐食多半是炒黃豆、炒花生米、爆玉米、炸花生米,再則就是糯米飯團或糯米粉糍粑。恭城平樂一帶縣城佐食則較為考究,酥炸小吃往往在十數種以上,請客人喝油茶往往擺上一桌子的小吃,看起來就像請客吃飯。侗族以油茶敬客是一種禮節,主人雙手捧茶敬客,並說些謙恭的話,善歌者還以歌代言,客人必須喝完兩碗,才算給主人面子,也是取「好事成雙」之意。兩碗之後不想再喝,便將碗筷一並交給主人,如果只交碗不交筷,則表示還想繼續喝,主人就高高興興地再斟滿一碗油茶送到客人手裡。瑤族則在第一、二碗送來時不送筷子,並將米花、炒豆之類的小吃加入碗里。喝完碗里的茶還留些小吃在碗底,以示有餘不盡,直到喝第三碗才送上筷子,所以客人必須喝三碗以上,只喝一兩碗,主人會不高興的。

靈川的地方風味食品中,最具特色的首推狗肉。靈川的狗肉色澤鮮艷,香氣濃郁,口味極佳。俗話說得好:「狗肉滾三滾,神仙站不穩。聞到狗肉香,神仙也跳牆」。靈川人愛吃狗肉,也很會吃狗肉。從選狗、宰狗、烹煮、吃法都有講究。
先說選狗,以其毛色論優劣,順序為:一黃二白三花四黑。狗的重量在10公斤左右為宜,此時狗肉質細嫩。
再說宰狗。此地殺狗之法,是以木棒敲擊狗鼻使之倒地,然後趁其昏迷時放血刮毛,再用干稻草燒盡細微狗毛,而不需剝皮。燒毛時,必須把握火候,太猛則爆皮,太小則除不盡毛根。燎盡洗凈之後,再將狗開膛取五臟。若五臟取得完好,不般不用水沖洗腹腔,以保持風味鮮美。剁狗肉時,要刀刀均勻,塊塊見皮。
第三說烹煮。狗肉下鍋後不放水,干煮干燜,火候文武要適當,力求熟而不爛,香而不焦,將狗肉煮至「五層樓」(肉塊經煮而爆裂堆砌)便是最佳程度。煮狗肉除用茶油、鹽、醬、醬油外,還配放沙姜、草果、八角、丁香、胡椒、陳皮等十餘種香料。香料以紗皮包裹,煮時只取其味而不讓香料散入狗肉之中。狗肉上桌前,再噴些「三花酒」,淋少許桂林腐乳汁。經過如此精心炮製,此時鍋中的狗肉塊塊金黃,奇香四溢,令人垂涎欲滴。
狗肉不僅味美,而且營養豐富。常吃可有大補之效,能治多種疾病。李時珍在《本草綱目》稱:狗肉能安五臟、輕身、益氣、強腎、補胃、暖腰膝、補五勞七傷、填精髓等。
對胃病、腎虧、陽萎等症,因吃狗肉而痊癒者屢見不鮮。

桂林田螺
桂林田螺是很地方特色的小吃,每天在夜市擺賣及中高低檔次餐廳也均可吃到。吃時,挑開螺的頂蓋,撮著嘴用力喝進去,吃完田螺再喝湯,其味道又辣又鮮,特別開胃。田螺身短圓、尾部尖實、螺肉結實,個大,多生活在水田、池塘。螺絲肉性寒味甘,含有豐富的蛋白質以及維生索C、鈣質和其他礦物質,能清熱、明目、生津。桂林煮田螺很有講究,買回來的螺螄,一定要放些鹽在清水中養幾天,每天都要換水,讓螺螄把肚裡的泥巴及排泄物吐掉,再用刷子將附在外殼上的雜物清洗干凈,敲掉螺尾,便於吸吮。加入油、鹽、姜、沙姜、三花酒、酸筍、酸辣椒、紫蘇葉、八角、草果,用武火爆炒,再放入豬骨頭湯用小火燜約2小時後再炒,非常入味。如果在吃前,再加入蒜泥、蔥花等調味品,吃起來就更有味道。吃田螺,講究「喝」,要用手指捏緊螺蛔,嘴巴湊近螺口用力吸吮,便會發出「噝噝」的聲音。當用力時,會同時將肉與湯吸出,當螺螄肉吸不出來時就需用小竹簽來幫忙挑出。螺螄湯是煮田螺的精華,用它做出的螺螄米粉,鮮辣得會令人額上冒汗,臉上放光,過癮極了。
桂林米粉
桂林不僅山水甲天下,而且米粉也很有名,它圓細、爽滑、柔韌,具有獨特的風味。其做工考究, 先將上好大米磨成漿, 裝袋濾干, 揣成粉團煮熟後壓榨成圓根或片狀即成。園的稱米粉, 片狀的稱切粉, 通稱米粉, 其特點是潔白、細嫩、軟滑、爽口。其吃法多樣。最講究鹵水的製作, 其工藝各家有異, 大致以豬、牛骨、羅漢果和各式佐料熬煮而成, 香味濃郁。鹵水的用料和做法不同, 米粉的風味也不同。
桂林米粉有許多種,最有名的是馬肉米粉。它用特製的紅燒馬肉作配料,馬肉鮮嫩味香,壯陽補腎。過去吃馬肉米粉多用特製小碟來盛,米粉僅供一箸,上面有幾片薄薄的馬肉,再加以幾粒油炸花生,拌以桂林辣醬,風味特佳。一人一口一碟,可吃二、三十碟粉。現在已改用大碗,滋味不變。
馬肉米粉以城中老店會仙樓的最為馳名,據說它開設於清代道光年間,原來設備不足,店面不大,但生意非常興隆,店主限定每日的出售量,以致後來的食客,只好等明天清早了。現在則不同了,顧客日夜盈門。
此外,桂林的街頭巷尾都有米粉、米粉攤,遊人逛了秀麗山水,再吃一碗桂林米粉,飽享眼嘴之福,實在是一大樂事。桂林米粉老店以又益軒粉店、石記米粉、味香館最為有名。
荔浦扣肉
前些年,隨著《宰相劉羅鍋》的熱播,荔浦芋頭也隨之火了一把。不過看到電視里乾隆皇帝對於荔浦芋頭的吃法,不禁覺得很可笑,甚至覺得有些浪費我們的芋頭。其實在我們那兒,芋頭的傳統吃法是作成扣肉。這到菜的做法還是有些講究,但是幾乎家家都會做,逢年過節,婚喪嫁娶都少不了這道菜,不過到了我們這代一個個都「好吃懶做」,幾乎都是大人們做好,自己吃現成的,久而久之怕是要失傳,所以特意問了問它的做法,不過沒有親手實踐,只能作為紙上談兵之舉。
扣肉者,首先自然要准備一塊肉,放入適量的鹽,糖,白酒(我們那一直用桂林三花酒)腌制一兩天,並在其周圍抹上蜂蜜,再燉煮20分鍾,待肉快熟之時拿出來後切成長方行塊狀。同時將芋頭也切成和肉塊同樣的大小,然後放入油鍋油榨十幾分鍾,待到芋頭周圍成黃色油榨狀後撈出。
等到芋頭和肉都冷卻後,拿出一個大碗,把芋頭和肉塊互相鑲嵌著立著排入碗內,這時碗內就是一塊肉一塊芋頭排成,這些東西只能與碗口平齊。再將這碗扣肉放入高壓鍋蒸煮一刻鍾,拿出來後,用一個比碗口大的盤子倒扣於碗上,最後將碗和盤子迅速翻轉過來,將碗拿開,盤中就是一道做好的扣肉了。上桌前,可在盤子周圍用些西紅柿片做點綴,或是在扣肉上撒些蔥末,這樣扣肉就做好了。
這道菜看上去精緻美觀,做得好自然是色香味具全,加上正宗的荔浦芋頭,香疏鬆軟。我們一般都是一次同時夾平行的肉和芋頭,一口咬下去吃到嘴裡有芋頭的香味和肉的鮮美,兩者融為一體極為可口。
沒有荔浦芋頭,用土豆代替來試試可能也會不錯,也歡迎大家去我家鄉旅遊,親自品嘗一下正宗的桂林名菜——荔浦扣肉。
尼姑素麵
桂林尼姑面的精華在於湯。用黃豆芽、鮮草菇、香菇、冬筍等久熬而成的湯,湯色金黃,味鮮而甜,清香四溢。面條用清水煮熟裝碗後,將湯放入,再加上桂林腐竹、黃菜、素火腿、麵筋等素菜和佐料即可食用,鮮香爽口、 色香味俱佳,尼姑面以七星公園內月牙樓的最負盛名。
粉 利
用上好的大米細磨成漿, 搓成小圓柱狀, 蒸至八成熟, 取出晾乾即成粉利。桂林粉利上市一般在冬季春節前後, 吃時切成條狀, 配上臘肉、芹菜或菜花、青蒜等燴炒裝盤即可食用。特點是色鮮味美、香滑爽口。
桂林水糍粑
製作工藝精細。把上好糯米蒸熟後,用力杵打,直到糯米飯全融,像棉團狀,然後再取出糯漿做成圓團,放入蒸籠蒸熟而成。水糍粑多放內餡,如豆蓉、蓮蓉、芝麻桂花糖等,質地細膩柔韌、 潔白晶美, 如趁出籠時熱氣騰騰, 再裹上點白糖或熟豆粉,更是色美味鮮,口感細滑沁甜。為桂林名小吃之一。
豆蓉糯米飯
將上好糯米蒸熟做成飯團,以甜豆蓉為主餡, 再拌以炒香的芝麻、夾些蔥花、油、米飯。柔韌、餡心鮮香, 饒有風味。現又有以香腸、煮牛肉等做餡的咸糯米飯亦別有風味,為桂林人早餐常見小吃。
馬蹄糕
主料為米粉, 把米粉裝入狀如馬蹄的木模里, 用黃糖粉、馬蹄粉或芝麻粉包心,猛火蒸熟,取出即可食用。其製做簡便, 吃來香甜撲鼻, 松軟可口。一般多為個體攤擔現做現賣,散見於各處街頭巷口,來往行人, 即購即吃, 極為方便。
湯 圓
桂林湯圓比一般的湯圓個稍小,是用上好糯米磨漿, 壓干成粉, 再和成團做皮,以桂林特產桂花糖或麻蓉、椰蓉、豆蓉等做餡製成。煮湯圓可用黃糖或冰糖, 也可配以糯米甜酒或雞蛋。滑爽、營養豐富,是小吃中的名品。
菜名:扒絲芋頭
採用桂林特產的荔蒲芋頭,削皮後用蛋青、澱粉裹入後油炸,待炸到色澤鮮黃時澆上糖汁,(糖汁用冰糖、醋、水調制而成)里香外脆、松酥爽口。菜的旁邊擺放一小碗清水,作用於切斷糖汁絲,也可起到降火作用。
菜名:柚子皮炒肉絲
